I prefer open-cell foam for the interior.  We had ours (main cabin)
made by an upholsterer in Columbia who happens to be a friend.  If
you're interested, his company is Cover-Uph 410-964-0855.  The cost
depends on the material selection.  You don't need Sunbrella belowdecks
and other materials look nicer and are more comfortable.  Tom Vaughn
had foam that works very well.

If you really just want to replace the foam, you could give Poptronics
in Baltimore a call.  They also go by the name "House of Foam" I
think.
