Lee, also, a two blade can be "strored" behind the keel.  We do that to race.
When the boat is out of the water, paint a white line on the top of the shaft
when the prop is    "hidden " behind the keel.   That gives the least drag.
With a three blade you are always dragging two blades in the water, at least,
maybe three. thats about a knot off your sailing speed in light to med winds.
