Hi David,
I would start to tackle your condensation problem by looking for a source of 
all this moisture.  Is there a soaked cushion hiding somewhere, or a locker 
that is catching rainwater from a deck leak; something like that.  It sounds 
like you have more than adequate ventilation, particularly when you were on 
board, and you had the hatches open. Besides the mildew and discomfort, the 
dampness can't be good for your electrical system and instruments.
