George .... Don Casey  (This Old Boat)  says the following:

Coat all the parts and surfaces - except the pawls and ratchet notches -
with a light coat of grease, Pack the bearings with grease,  but not
excessively. Lightly oil the ratchet mechanism - the pawls and the
notches - with machine oil. Do NOT use engine oil. The detergents in
engine oil will eat into the bronze parts of the winch.

He doesn't say not to use "wheel bearing grease" but suggest you stick
with a regular Marine Lube. He does suggest cleaning thoroughly in
diesel fuel or kerosene to remove all of the old grease first.
