Guy,

I just removed my stern casting and had a similar problem with the set 
screws. In fact I believe the cutlass bearing was original equipment, 26 
years old and there was know I was going to press it out. Being a toolmaker I 
machined out the bearing by plunge milling the bearing on the 2 sides without 
the set screws to collapse the bearing. when the bearing collapsed and 
removed I was able to "drive" the by drilling thru. The 5/6-18 set screws 
were machined to a point so when so I pointed the  new screws and "touched" 
the bearing with a 1/4" drill thru the tapped holes after the new bearing was 
installed. After finding out the set screws were socked down into the drilled 
dimples, I realized the bearing would never have pressed out.

You should have know problem tapping the holes to the next larger size, 
3/8-16. The tap drill size for 3/8-16 is 5/16" ( the size of your stripped 
holes). The original screws were bonze which were not available locally so I 
used stainless. West marine sells a salt water impervious antisieze compound 
($6.50 a 1/4 Oz. tube) that also prevents galvanic reactions so I liberally 
coated the screws.

I hope this info helps. Also Since this was my first appendectomy I didn't 
know I had to drill water intake holes thru the casting openings and thru the 
bearing. No big deal, just don't forget to do it.
