The prop walk is in real terms only noticible for a few seconds.  Once the boat starts moving to where it has steerage the rudder can overcome the effect.  When wind is added to the equation, most sailboats will tend to back into the wind, unless you have a fair amount of sternway built up.  At this point you have to keep good control of the tiller or you can have the rudder slam hard over, and perhaps breaking something.  When backing you want to keep the rudder fairly close to amidships to keep from over loading the pintals.
