The toerail on the older boats like you have is a somewhat complex shape.
There is no 'mold' or even a pattern that I am aware of.  Bruce Rankin used
to make replacements and I remember watching him and hoping I never had to
attempt it.  You can probably create a new joint rather than take off to an
existing joint.  It is likely the joint (if properly glued) is stronger than
the wood itself.  A simple taper would be the easiest, a double taper a
little better.  DO NOT use epoxy, it will deteriorate in time in the sun.
Resorcinol is the preferred glue for that application.  It is a two part
powder plus catalyst (icky brown liquid) and is quite strong.  Apply to both
joints and then join under pressure and let sit for a day.  After removing a
piece (perhaps a foot or two long) you may be able to shape a new piece of
wood to match.  Biggest problem will be in bending such a short piece to the
proper curve.  If all you are doing is repairing a small piece where the
chock was, you may be able to just carefully cut a plug out and replace.  By
a plug I mean a piece perhaps half way down so you leave the bulk of the
rail in place.  (hope that is clear).  A lot depends on just how much you
need to repair.
