I would think that in theory, at least, drilling a larger hole through the
original chainplate to take the larger bolt is going to weaken the
chainplate. (There's a reference to that in "Good Old Boat" as well.0

However, is there sufficient width of steel in the original chainplates that
one needn't worry? Or does one replace the chainplates as well, to absorb
the larger hole for the larger bolt?
