For the holidays invest in the small publication by the gougeon brothers
that deals with laminating. My books are sill packed from the move into
our new house but there is a section in one on building a rudder from a
mold.
Here is an example of a foam core rudder for example.

So if you can get to an a30 rudder out of the water, I'd suggest doing a
one off mold/impression of the rudder and making up your own. Maybe a bit
of work but worth the time if you are going to do it.
By the way if you are doing it, avoid the plywood in the layup. use only
hardwoods and seal completely as this will be under water all of the time.
Remember Osmosis happens!
