On this picture 
http://alberg30.org/maintenance/disorganized/miscpics/119.jpg you will see 
two bolts that hold the cutlass bearing housing onto the keel. Once they are 
removed, the housing itself is can be unscrewed from the pipe that goes 
through the hull which is the stern tube that the shaft goes through. Don't 
try to pry the housing off, because it is screwed on. If the pipe has a good 
seal between the pipe and hull, then I would think you could cap it with a 
bronze cap.

Is the cutlass bearing housing those two giant nuts?  I take it that I
unscrew it with two pipe wrenches so that I can pull the shaft out - and
the stern tube will remain in place?  Then cap the stern tube with a
threaded bronze cap - the stern tube I guess is what I have the zinc
anode screwed to.  Sounds simple - I'll also cap the former water intake
- although with regret - it and the grey made a sensational steam room.
