I have reinsulated my icebox but did it the hard way. 
I tried to inject foam between the insulation and the
finished wood and hull but found resistance to the
drill bit after inserting the bit 1 inch.  Thinking I
had no room to inject foam I removed the ice box top
and cut out the old interior box.  When this was
removed I found the reason for the resistance was due
to an exterior fibreglass over the sprayed on foam, I
also noticed there is a lot of space arround the box
for injected foam insulation.  It should be noted that
I found the bottom part of the box the foam was
saturated with water from the drain hole thus having no
insulating value at all.  With old box out it is
surprising how much room there is, so much so that I
reduced the volume of the box by half, one lid, added 6
in's of styrofoam sm arround the sides and bottom and,
had room between the engine room bulkhead and ice box
to generate 6 in wide storage area for soft drinks beer
or water.  Outboard towards the hull there was also
room to create a 12 deep by 5 in wide storage for
bottles.  When this was done we did not find the
storage capacity of the box was reduced because we
deleted a lot of items we normally stored in the box
that did not really need to be cold. I still have room
for 24 cans of drinks, milk, meats, eggs, ice blocks
and ice cubes_and still not be full. The hardest part
was getting out the old box which had too cut up in
pieces and trimming the bottom part where the hull
slopes up in the end where the drain is I have about 10
ins of insulation.
