I checked out the site you listed below (epoxy.com) and it looks to me like they have done a great deal of fairly long term testing to show what water and fuel will not damage the epoxy tank but I could not see any indication that they tested to see what chemicals would be absorbed from the epoxy into the water. Does anyone know if that has been tested for ?

Two part epoxy is non toxic after curing. It's what I
coated my water tank with.
A quick google search came up with a bunch of sites. Here
