My two questions are: 
 
1. What is a schnitzel?
 
2. My boat  has two diamond shaped pad eyes on the fore deck, one in close proximity to the water intake and the other one in the opposite location on the starboard side of the boat, and two more identical pad eyes located outboard on the cabin top of the salon. What are they for? I have assumed they are used in racing, but do not know how, if that  assumption is correct.
