I might suggest you look at J Bergquist's cooler rebuild. His is #287 and a non-liner boat, but I think similar modifications would work on the newer boats too. I can attest that it is well insulated having sailed many warm Wednesday night races and had ice to make Dark and Stormy's after finishing.
His may be a more radical change to the cooler geometry than you are considering, but I think it was well considered and a success. His project is described in several phases at :

I am not sure when... I have found my usual mode of operation is to consider
a modification for a year, then do it the next year. I may not get to this
till spring. I'd be glad to do it together/apart!
In the mean time I am gearing up to go at TOUCH WOOD.
