When I did my boat I used less that 1qt per coat.  I used Interlux 2 part
epoxy paint for the hull and deck.  After the primer I applied the 1st top
coat thinned 30% the 2nd 15% and final coat at normal strength.  The deck
finish had a dulling agent added to reduce glare.  I also whet sanded with
220 grit between each application.  When applying with a 4 in roller I
started tipping off but quickly found it was not necessary if you roll
slowly.
