your new comings will look great in teak.  

another importer of teak is EastTeak.  they have a west coast and east coast office.  I bought my teak from their west coast office and was very happy with the staff and the wood.

You might consider  replacing the quarter round that seals the outside of the coamings to the deck with teak also.  I just reinstalled my coamings and added new  1 1/4 edge rounded teak trim.  The old trim was sanded down to the screw heads over the years.  largest size seems A bit more robust for annual sanding and revarnish etc and I think looks good and  helps anchor the coaming to the deck.

BTW, there is something like 3 or 4 inches of bend at the middle of the cockpit to accommodate the coamings to the curve of the molded cockpit sides.  Steaming the boards and bending to radius will help a lot when bolting things together.
