I wouldn't either, except for the fact that it means I sleep wrong way round in the v berth. She's a sailboat but also my home.
95% of my time aboard is at the dock.
sleeping two to a 26" wide settee that I am slightly long for(I'm 6'1" if the berth is 6') is no fun.
A full water tank, and 300lbs of gear on deck gets me just about right.
I'm going to empty the lazarette and see how that helps.

That seems like an extreme reaction, to me. Honestly, having a full
water tank almost levels out the boat. Having her under sail seems to
put her in fine trim. I honestly don't worry so much about the trim at
anchor or under power. She's a sailboat.
