Matt,
I still have the wooden spreaders on my boat and have prepared them with a
two part epoxy paint (white) on the top and varnish on the underside.
My reasoning was the long term protection and reflective qualities of paint
combined with the aesthetically pleasing warmth of varnish on the more
protected underside.
So far it has worked for me. Good luck with the restoration.
