On Slainte we also have a diesel and the method of leaning over the motor is not possible. We do have a panel cut out in the port seat locker that gives access to both the stuffing box and the muffler. One can shimmy down into that locker with your legs aft and have both hands free for work. Two channel locks on the stuffing did the trick for us.

Yes, thanks, George, those are helpful. I read with interest folks being able to lay on top of the motor and reach behind to adjust the stuffing box. My boat has been repowered with a three cylinder Vetus/Mitsubishi diesel and only a very hungry small child could hope to gain access in this manner...I suspect that's why the cockpit sole access hatch was installed!
