A trip to the travel lift here is expensive. Fix it in the water. I replaced one for a cockpit drain. Not fun laying on the engine...
Pick up one of the red foam plugs for piece of mind. Have everything ready and just do it. I must warn you: it will be very anti-climatic. So much so that you might feel a little silly for being so wound up about it. (I did...)
Pressure n flow:The thru hull is only about 1' to 18" below the surface. A galley thru hole is probaly no more than 1" diameter. It's not that different than holding a 5 gallon can, with pour spout, upside down. The effective pressure head is about the same. How long does it take to dump one of those into the fuel tank? You can easily cap that with your hand. So, you are not dealing with high pressures.
Swapping:As you loosen the old one it will start to leak but there will not be any major flow until you lift it free. It will take a second or less to get the replacement started. The flow drops back as soon as you start to thread the new one.
Check for swing. You might find that you need to remove the handle (s) in order to rotate them.

Heelo again,
That is it, i have found new bronze ball cock but i am fearful of doing the fix on the water. Se looks like a ride to the travelift! Do folks put teflon tape or plumbers goop on these when fillting them?
Seems i left it closed over the winter so another hard lesson learned!

Note that if you drop a heavy tarp over the side of the boat to cover
the outside of the through hull, you'll likely have very little water
actually get into the boat. I mean think of how effectively a simple
plastic shopping bag can clog the engine intake--it's a very similar
principle :P

Heck, I'd jump in and stuff a wooden plug or waxy rag, or something in the
hole from the outside and give it a go while on the water. I like to avoid
yard fees at "nearly" all costs.
Any locations nearby with a 4 foot low tide? Either way, I'd deal with it
asap.
