Good morning Greg -
The eyes on the track cars are only to be used for shackling blocks to.
So the run of each sheet should be from the clew of the sail, down to the sheet block (shackled to the car) then in under the lifelines to your sheet winches.
It is possible when using a very narrow sail to sheet inside the shrouds to those angled tracks on your deck, but this is not possible when using anything larger for a sail.
The gear on your cabin top is likely the remains of a setup that brought your halyards back to the cockpit from the mast. if there are three, I’d guess they might be for the main halyard, the jib halyard, and either a second jib halyard or a spinnaker halyard.
I’ll send you a photo of our sheet set up directly to your email address. You’ll see we have what are called ‘foot blocks’ just aft of our winches port and starboard. The purpose of these is to lead the sheets up to the winches at the same angle no matter where on the tracks the primary sheet blocks are.
