The only time you need worry about stainless/aluminum crossion to any degree 
is when the parts are in contact with saltwater, usually, hopefully, that's 
outside the boat. To minimize this I always use a sealant, caulking, when 
assembling aluminum parts with stainless bolts on the exterior of the boat.

Wouldn't there be corrosion issues with using SS Bolts on an aluminum plate?
Usually on masts that issue causes corrosion which over time weakens the
mast. I know I have broken MORE than my share.

Would Galvanized be any better / worse?

I just did this repair and used 6" stainles hex bolts with wahers for and
aft. The length was perfect.

If you have not done the drilling yet, I recomend that you buy a drill bit
by the trade name "the Agreesor" that pieceof gear madethe job much much
easier.

Pre drillonreof the aluminum plateson a drillpressbeforyou through bolt
them. (avoid dimplimng) any other questionsfeelfree.
