I did the same thing on Talisman this spring and it was not difficult for the reasons indicated in other e-mails.  I would definitely support getting rid of the "lamp cord" wiring.

I replaced 90% of the wiring and all the lights except those inside the
cabin, including a new panel with breakers, new main battery switch,
adding wiring to new instruments, an outlet for a hand-held searchlight,
etc. It cost a couple of hundred dollars with oversize marine-quality
wire and is well worth it. As observed, Whitby used what looks like lamp
wire (zip cord). Maybe it wasn't, but it certainly is over-age by now.
One of the best things I have done to BRIGADOON in terms of reliability
and safety.

    Having done that years ago on another boat, I had learned a lot, one
thing being to use crimp tools, not a soldering iron.
