[Alberg30] Screw packing / Winter work

Just curious, what is inside the packing nut - or what is "packing"?

Also, I'm trying to decide whether to pull my Alberg this fall and work on it out of the water, or work all winter in the water, then pull it in the spring for a few days for bottom painting and through hull replacements in a couple of spots.

We don't get a lot of ice here and I have access to a bubbler and electric at my slip.

What would you do?
