Hi Brian,
Maybe a small portable oven thermometer which sits on or hangs from the shelf inside the oven will help you. With this handy little gadget you'll be able to experiment and find which setting on the control knob gives you the temperature you're looking for. Perhaps marking the settings on the front of the stove with a scratch or dot of paint will give you a quick guide of high, medium or low (e.g. 400, 350 and 250). You might even be able to get a metal meat thermometer with a short probe and install it through the door if there isn't one there already. I saw some in the stores last Christmas that were quite short (to be stuck in the bird or roast to check the internal temperature) and would be perfect for something like this.
