Easyouts are the work of the devil and are completely misnamed.
(Reminds me of my mother-in-law naming her cat "Sweetheart") They are
very hard and brittle. If the bolt is really stuck, the easyout is
likely to break before the bolt comes free. And you can't drill out an
easyout--they're harder than drill bits.
You can also cut a slot with a small chisel. If all else fails, you can
drill a small hole in the center, and then uses larger and larger drill
bits until you reach the threads. Then clean out the remaining bit with
a sharp tool. If the drill is off-center, you may need to use a small
triangular file on the thick part, so you can break it in two. These
fasteners are made of bronze, and aren't hard to drill.
But my advice is to never use an easyout.
