George, someone on the board previously asked me to shoot some photos of
the anchor setup. There are a couple of shots including the attachment to
the stem. The link to these photos is below.

Regarding your question about the measuring tube in the photo; its
actually a device that shows the current angle of my canting keel. No,
it's the only thing on my boat that I can say with absolutely certainty
will always work; the water gauge. There is a small copper tube that
runs from the bottom of the water tank and is epoxied through a small hole
drilled into the top of the tank. Here I attached a run of aquarium
tubing that goes behind the cabinet and exits where the floor pan turns at
the base of the inside main bulkhead (it's a little hard to see in the
photo). This happens to be the exact elevation of the bottom of the water
tank. The tube is attached to the board that has tick marks for 0-25
gallons; they are not linear due to the shape of the tank. The tube has
a little cap (magic marker) at the end where it tucks under the top of the
drawer but it's really not needed as it ends well above the top of the
tank even when healed. From time to time or after the tank has run dry
you need to suck on end of the tube to re-siphon the water level. It
works as long as gravity does; or the boat is inverted, in which case I
assume one simply reads the gauge backward.

Dan the strip above the bulkhead hatch is part of the ceiling mount where
I store the table when not in use. If you look carefully you can see a
barrel bolt on the left of the photo. One side of the table edge rests on
this strip against the buklhead, the opposite side of the table has a
hole drilled into which the barrel bolt is inserted and locked. The table
is wedged between the bolt and the bulkhead. It's very stable even
underway and does not interfere with the opening of the hatch. Likewise,
it doesn't interfere much when sleeping in the bunk as it sits in the
forward end of the bunk above your feet.
