[Public-list] Engine Bunk/Bed Question

I have the engine out for a rebuild and am getting ready to start
working on the bunks.  I have a couple questions for any of you who have
rebuilt bunks on a non-liner boat.  Our starboard bunk has no aft studs.
Not only that, but the bunk itself appears to be hollow back there (I
poked a screwdriver down the holes, there is a substantial void under
where the studs should be).  Is this normal?

Should I mix up some thickened epoxy to fill the space?  Any reason not
to re-fit studs at the same time (the holes are there, just no studs)?  

The Port bunk had both studs until the motor came out with one of them.
I am going to be re-setting the aft aft stud on the port bunk, but I
noticed when looking at it over the weekend that the bunnk almost looks
like it has some spray foam inside (and leaking out the aft end).  Is
this normal?  Should I do anything about it or just re-bed the stud?

How were these bunks originally built?  It almost looks like a couple
layers of glass over either wood which has since partially rotted away,
or over some type of foam.
