I once did a project where we created an object out of "Great Stuff" and needed to measure its volume using displaced water. I spray-painted it with two coats of rustoleum and checked it's weight throughout the project to see if it absorbed any water during its frequent full immersion - it did not. This doesn't do you much good if you need to spray the stuff in tight spaces of course.

Normally the 'great stuff' you purchase in the big box stores is not closed cell. While it forms a cuticle over it's outside surface that too will allow water to penetrate to foam inside. If you want closed cell then you need to specifically designate closed cell. Usually much more expensive and I don't know if it is available in a foam application. Usually just in sheets and blocks.

Gord - do you know if the cans of expanding foam result in open cell or closed cell foam ?? Any time I have used the stuff around the house where it cures while exposed to the air it appears to skin over with a surface that looks like it would shed water. [ Not so if you trim off the excess with a knife. ]
Any thoughts from anyone else ?
